Deliciously Busy Day

Hi Again,
So my day was busier than I expected, so I am home tonight to do laundry, right recommendations, and get organized so tomorrow I can put in some thesis time.
Lunch

Panera you pick two with a Mediterranean Veggie Sandwich and Greek Salad. I switched the bread to mutligrain, but it was a bit too soft.
Later I went grocery shopping and picked up some great buys. I'm really excited to try my agave!

I also stopped in Barnes & Nobel to grab Dear John. I think Channing Tattum is adorable, so I definitely plan to see the movie.
I went for a short walk before dinner and then prepared Curried Lentils and Spinach from this 5-Ingredient Gourmet Vegetarian Cookbook.
They were DELICIOUS! Here is the recipe...
Curried Lentils with Spinach
  • 1 cup of brown or red lentils (I used green)
  • 3-4 garlic cloves minced
  • 1/4 cup of finely chopped onion
  • 1-2 teaspoons of curry power (I love curry so I added a lot :)
  • 2 10oz packages of frozen spinach chopped and drained (I only had one, but the more spinach the better)
  1. Combine 3 cups of water, the lentils, garlic, onion, and curry powder in a large saucepan. Bring to a simmer, cover, and simmer very gently until the lentils are tender, 25-30 minutes for brown and 20-25 for red.
  2. Drain spinach and squeeze out some of the water. Stir into the lentils and season. Cook another 5 minutes and serve.
  3. I also added fresh cilantro! yummm

So my mom just sent me the scone recipe and if I have a chance to make them I will post that later.
Enjoying the Tudors now and getting some stuff done!

Another fun Birthday night

Lunch yesterday was a simple salad with a mustard vinaigrette. My go to dressing is mustard and some type of vinegar. I like the tangy dressings.

Last night after some library time I was only planning on making some soup before running errands, but my friends called me to go out for my friends 21st birthday.

We went to this great bar/bistro in Cville called the South Street Brewery. It has local favorites and award winning beers. I tried Satan's Pony which was a dark ale with a lot of flavor.


For dinner I had this delicious seared tuna over greens and asian slaw.


My friend Joey, happy to be featured on my new blog, had a really good Satay noodle dish.

We also had a brownie sundae for dessert. I tried a few bites and it was quite tasty.
After dinner we watched No Country for Old Men, which was a good film, but so violent that I had to watch A Walk to Remember when I went to bed.
Today's breakfast was vanilla Oikos, Special K, and half a banana, plus iced coffee.

I've got lots of errands to do today including grocery shopping. I may do some work in Panera!

Morning everyone,
I think a combination of too much chocolate cake and going to bed really late made me feel sluggish this morning. So...I am trying to eat really clean today and finally be productive on my work.
Breakfast was plain greek yogurt and and apple. The Stonyfield Organic Oikos Greek Yogurt only has 80 calories and 6 grams of sugar, so it is pretty healthy.

After I get organized it is off to the gym and then the library.

So today was a delicious afternoon and evening.

For lunch I had a Clif Bar called Peanut Toffee Crunch. I am a huge fan of Clif bars and I think I will try and do a flavor review at some point. This was a new flavor for me, but I really liked it. I also enjoyed several iced coffees!

Later today I baked a cake (dark chocolate with vanilla icing) for my friend's 21 B-Day. I made the cake from scratch but bought the frosting (I don't own a hand blender, so I thought the whipping would be tough).



Then we had a group dinner and my friend made a bunch of yummy asian inspired dishes.


I had some of the veggies, eggs, and 2 crackers with hummus. I also had my left over ginger tofu over spinach. Lots of yummy eats!


Hanging out with friends was definitely a happy moment and I am going to enjoy a few episodes of The Tudors tonight (probably eat some chocolate cake as well).

Night night!
Didn't get a chance to post last night, but I did have a yummy dinner and dessert!


I had this delicious steamed ginger tofu with veggies and rice. I only ate half, so now I have left over tofu for a salad! My friend had some type of chicken and green bean dish.

Later we went to my other friend's place for a fire and we made smores! I had one smore but a few extra marshmellow along with some tea and coffee. Yummmm

This morning I am back to my normal breakfast...
Special K, soymilk, banana, blackberries.

I woke up really late this morning after hitting snooze multiple times. We watched Sweeney Todd last night until 1:30am, but it was really good! (And I resisted the donuts and iced cream for healthy cereal, go me!)

Today's breakfast is greed yogurt, Special K Protein Plus, and 1/2 a banana plus Iced Coffee with Soymilk.

On the agenda today is gym time, thesis work and a study break at my friend's over a fire.

Rest of the day...



So I spent the rest of the day finishing my transcript logs for my dad and did get a run in...




I also had a little snack here.
For dinner I had a yummy salad with beans and veggies, but didn't take a picture.

My friends and I are watching a movie now and they just bought donuts and iced cream, so I am going to try and stick to moderate indulgences.

Also, my happy moment of the day (in addition to playing funny word games) was seeing how pretty the lawn was at night here at UVA. Enjoy!

Yummy Breakfast




Good Morning!
I slept in pretty late this morning, so my productive day is starting slowly.

I did make a yummy breakfast: Greek Omlette with spinach, tomatoes, onion, and feta with a light whole wheat english muffin, some earth balance spread and....
Iced Coffee of course!

Going to work on some tapes for my dad and then thesis stuff.
